Goan Vindalho Curry Powder
My Mum’s traditional Goan Vindalho curry with Portuguese influence! Portuguese explorers sailed to Goa preserving meats with vinegar and spices. Goans then used their Indian spices to make a traditional Vindalho. Just as Mum and Granny did, I use fresh whole spices which gives this pork or veggie curry a full rich flavour and not ‘too’ spicy! From our Goan kitchen to yours - enjoy my Mum’s Vindalho curry!

PS: For a spicy vegetarian curry - cook with pumpkin, kumara, cauli, green beans, paneer or tofu.
