This rice dish is aromatic and delicious.  Goes well with any meat, chicken or vegetable curry. Serves:  6-8 people INGREDIENTS2 cups Basmati rice3 cups hot water1 medium onion sliced1 medium tomatoes chopped3 cloves whole3 cardamoms whole2 inch stick cinnamon4 tbsp oil or ghee Salt METHOD-  Wash rice and soak for 20 minutes.  Then drain.-  Heat oil in a pan, sauté onion and spices until onion turns light brown.-  Then add diced tomatoes and sauté until soft.-  Add rice and sauté gently for a minute. -  Add hot water, season and cook on medium heat.-  Let water come to a boil without the lid.  When liquid reduces to level...

CHICKEN XACUTI CURRY

One of my favourite Indian desserts - it is creamy with a delicious saffron and cardamom flavour.Ingredients:1 1/4 cups cooked Basmati rice1 3/4 cups milk10 tsp cream8-10 saffron threads1/4 cup brown sugar1/4 cup pistachios chopped2/3 cup flaked/slivered almonds1 tbsp raisins2 tsp rose water1 tsp ground cardamom1 pinch of saltMethod: Place cooked rice, milk, cream and saffron threads in a pot and bring to boil.  Simmer for 20 mins.
