Potato Mince Rissoles

Serves 6-8
Ingredients:
Cooked mince (see Goan Mince recipe)

1 kg potatoes - boiled and mashed with salt & pepper and a little butter!
Breadcrumbs
Eggs - beaten
Oil for frying

Method:
-  Make a small ball with the mashed potato and cup/press in your hand. 
-  Add a spoonful of  cooked mince and close with potato making a small parcel.
-  Dip parcel in egg and roll in breadcrumbs.
-  Flatten a little to form a small round patty and shallow fry until golden brown.

Serve as a side dish, or as a main with salad. Delicious!
