Goan fish cakes - they are to die for!
Goa, being costal, fresh fish and seafood is plentiful. There are a number of delicious seafood recipes - this is one of them. I have been making my fish cakes quite frequently and they are so moreish that we never tire of them. The fish cakes are full of fresh flavours with a bit of zing...crunchy when you bite into it and soft on the inside.
Enjoy with a salad. Another option is make small fish balls and serve as finger food or how about fish burgers….delicious!!
Ingredients:250gm firm white fish
1 onion medium chopped
1tsp grated garlic
1tsp grated ginger
1/2 tsp turmeric powder
1/4 tsp pepper powder
Salt to taste
1-2 green chillies finely chopped (adjust to taste)
Juice of 1/2 lemon (adjust to taste)
3 tbsp fresh coriander chopped
1 Egg beaten
Breadcrumbs or panko crumbs
Oil for frying
Method:
1. Cut fish into big pieces and cook on low heat with onion, garlic, ginger, salt and spices (do not add any water).
2. Cover, and after 2-3mins give it a stir and cover again. Fish stock will start to appear. Mix every now and then to avoid fish from sticking to the pot. When the stock is all absorbed the fish is cooked. Take it off the heat and let it cool.
3. When slightly cool, blitz in a food processor or use a stick blender.
4. In a mixing bowl, add the fish, green chilli, fresh coriander, lemon juice and beaten egg. Add a couple of tablespoons of breadcrumbs and mix well.
5. Form small round balls and shape into patties - roll in breadcrumbs and shallow fry until golden on both sides.
