Goan Chicken Xacuti curry

Ingredients:
500g Chicken thighs/drumstick - free range (can use lamb or beef too)
2tbsp of Jen's Goan Xacuti Curry Powder
2 onions finely chopped
2tsp crush garlic
1tsp grated ginger
3tbsp fresh or desiccated coconut lightly toasted
400ml coconut milk
Juice of 1 lemonCooking oil

2 green chillies (optional)

Method:
1.  Heat oil in a pan. Sauté onions until golden on medium heat. 

2.  Add garlic and ginger,  sauté for 1 minute.
3.  Add Jen’s Goan Xacuti curry powder and toasted coconut, sauté on low heat for 1 minute.  
4.  Add chicken, sauté for a couple of  minutes. Add coconut milk and bring to a gentle boil.
5.  Add lemon juice. Simmer semi-covered until chicken is tender,  stir occasionally.
6.  To make it spicy, add a couple of green chillies when sautéing onions.
