This rice dish is aromatic with whole spices and fried onions and nuts. Delicious, easy and quick to prepare. Use any long grain BASMATI rice (aged 2 years preferable).
Ingredients:
2 cups Basmati rice
3 1/2 cups hot water
1 medium onion sliced
3 cloves
3 cardamoms
2 inch stick cinnamon
1/4 tsp Turmeric powder
3 tbsp oil or ghee
salt
Fried onions
Nuts and/or sultanas (optional)
Coriander fresh (optional)
Method:1. Wash rice and soak for 20 minutes in water. Then drain.
2. Heat oil or ghee in a pan and sauté sliced onion with the whole spices until onion starts to turn light brown.
3. Then add rice and stir gently for a few seconds.
4. Add 3 1/2 cups of hot water, turmeric powder and salt. Stir and leave to cook on medium heat. Do not stir frequently during the cooking process (like you would for a risotto).
5. Let the liquid come to a boil without the lid.
6. When the water level reduces right down to the level of half cooked rice, turn the heat down to low and cook with the lid ON until liquid is absorbed.
7. Give it a gentle mix to loosen the rice and LEAVE to rest for approx. 5 minutes with lid on before serving.
8. Garnish with fried onions nuts and coriander.
