A refreshing chutney with fresh coconut, coriander, mint and a few spices.  Makes delicious vegetarian sandwiches.  Could also be used as a dipping sauce with meat balls, kebabs or even crudités.  

2 cups fresh coriander (use stalks and all & wash well)
2 tbsp fresh mint
1 cup fresh coconut (grated) 
2 green chillies
1/2 onion (small)
1/2 inch ginger
1/2 tsp cumin seeds
2 cloves garlic
1 tsp tamarind paste
1 tsp sugar approx. (adjust to taste)
Salt to taste

Blend all the above ingredients to a fine paste with 2 tbsp water.  Add more if required when blending.  The consistency should be a thick paste.  Adjust seasoning, tamarind & sugar if required

Chutney sandwiches (1 loaf)

  1. -   Lightly butter slices
  2. -   Apply a layer of chutney on both slices.
  3. -   Add thinly sliced cucumber.  
  4. -   Cut off crusts.  
  5. -   Cut into half or quarter for small finger sandwiches.
